Garlic: Vegan Cooking Guide
A single garlic clove packs the same aromatic punch as larger quantities used across a dish. Whether minced, sliced, crushed or whole, garlic is the aroma and flavour backbone of global vegan cooking.

How to Use Garlic
Crush with the flat of a knife and peel easily. Mince for sauces, slice for stir fries, leave whole when you want a mild, perfumed background flavour that can be removed before serving.
Nutrition
Even a single clove provides allicin, manganese, and small amounts of vitamin C.
Chef's Tips
- One small clove equals roughly half a teaspoon of garlic paste or a quarter teaspoon of garlic powder.
- Don't rush garlic in the pan - low and slow gives sweetness; high heat and speed gives bitterness.
- Garlic infused oil (cooked until golden then strained) is a wonderful way to get garlic flavour into a dish for those who find raw garlic hard to digest.
