| 2 tbsp | olive oil |
| 1 | onion, finely diced |
| 2 | garlic cloves, minced |
| 300 g | arborio risotto rice |
| 150 ml | dry white wine |
| 300 g | frozen peas |
| 3 tbsp | nutritional yeast |
| 1 | lemon, zested and juiced |
| 1 handful | fresh mint, roughly chopped |
