1. Fresh red chilli (finely sliced)
Ratio: 1 small chilli per 1/2 tsp flakes

2. Cayenne pepper
Ratio: 1/4 the amount
Significantly hotter - use very sparingly. Provides heat without smokiness.
3. Harissa paste
Ratio: 1/2 tsp per 1/4 tsp flakes
Adds garlic and herbs alongside the heat - changes the flavour profile but is a good-natured sub.
4. Hot sauce
Ratio: Few drops
Liquid rather than dry - add at the end of cooking. Bright and vinegary alongside the heat.
