1. Coriander seeds (toasted and ground)

Ratio: 1:1

Far superior flavour - toast in a dry pan and grind fresh. This is the base ingredient.

2. Ground cumin

Ratio: 1:1

Earthier and less citrusy but balances similarly in spice blends. Often used alongside coriander anyway.

3. Ground caraway

Ratio: 1:1

Similar citrusy warmth - works especially well in Middle Eastern and North African dishes.

4. Mixed spice / baharat blend

Ratio: Half the amount

Contains coriander alongside other spices - use less to avoid over-seasoning.
