1. Lime juice

Ratio: 1:1

Slightly more floral and sharper - works in everything lemon juice does, with a different character.

2. White wine vinegar

Ratio: 1:1

Provides acidity without the citrus flavour - works better in savoury applications than desserts.

3. Apple cider vinegar

Ratio: 1:1

Fruity and mild - works in dressings and marinades where lemon is a background note.

4. Citric acid powder

Ratio: 1/8 tsp per 2 tbsp lemon juice

Pure sourness without any flavour - useful in baking where you only need the acidity.
