1. Tinned chopped tomatoes (blended smooth)
Ratio: 1:1
Blend a tin until completely smooth and sieve for the closest result.
2. Fresh tomatoes (blended)
Ratio: 500g fresh per 500ml passata
Peel, deseed and blend - best in summer when tomatoes are ripe.
3. Tomato purée diluted with water
Ratio: 2 tbsp purée + 300ml water per 400ml passata
More concentrated - add some sugar and herbs to balance the intensity.
