3 Substitutes for Tomato Purée in Vegan Shakshuka

1. Sundried tomato paste

Ratio: 1:1

More complex, slightly sweeter with a concentrated flavour. Excellent in pasta and stews.

2. Tinned chopped tomatoes (reduced)

Ratio: Cook down 400g tin to 3 - 4 tbsp

Time-consuming but produces a genuine concentrated tomato paste.

3. Sundried tomatoes (blended)

Ratio: 3 - 4 dried tomatoes per tbsp purée

Rich, complex and slightly tangy - a premium substitute that adds interesting depth.
