4 Substitutes for Vanilla Extract in Vegan Hot Chocolate
1. Vanilla bean paste
Ratio: 1:1
Same flavour with added vanilla seeds - gives speckled appearance and slightly more intense flavour.
2. Vanilla pod (scraped seeds)
Ratio: 1 pod per 2 tsp extract
The most intense vanilla flavour possible - use the pod in milk infusions and custards.
3. Vanilla sugar
Ratio: Use half the amount of sugar as vanilla sugar, reduce other sugar
Less intense - useful in baking where you want subtle background vanilla without extra liquid.
4. Almond extract (half the amount)
Ratio: 1/2 the quantity
Completely different flavour - sweet and nutty. Works in some cakes and cookies but changes the flavour profile entirely.
