1. Chopped green olives

Ratio: 1:1

Similarly briny and salty with more body. Works well in pasta sauces, tapenade and potato dishes.

2. Diced gherkins / cornichons

Ratio: 1:1

Provides the same sharp, vinegary punch - add a little of the pickling brine to the dish too.

3. Nasturtium buds (pickled)

Ratio: 1:1

Home-pickled nasturtium buds are a brilliant free substitute if you grow them - almost identical.

4. Pickled caper berries (roughly chopped)

Ratio: 1:1

A larger version of capers - chop roughly for the same briny effect.
