4 Substitutes for Tinned Chopped Tomatoes in Borlotti Bean Minestrone

1. Passata

Ratio: 1:1 by volume

Smoother and slightly fresher - perfect for pasta sauces. No texture chunks but same flavour.

2. Fresh tomatoes (chopped)

Ratio: 400g fresh per 400g tin

Better when tomatoes are in season (summer). Skin the tomatoes first for a smoother sauce.

3. Passata + diced fresh tomato

Ratio: 200ml passata + 200g fresh

Best of both worlds - the richness of passata with the freshness of raw tomato.

4. Roasted tomatoes (blended)

Ratio: 1:1

Deeper, more complex and slightly sweeter. Roast halved tomatoes at 200°C for 30 minutes before blending.
