4 Substitutes for Floury Potatoes in Vegan Mac and Cheese

1. Sweet potato

Ratio: 1:1

Sweeter and brighter orange - roasts and mashes beautifully. Slightly different flavour that works wonderfully in most dishes.

2. Celeriac

Ratio: 1:1

Lower in carbs, more complex flavour. Mashes silkily and roasts well. Makes excellent chips/fries.

3. Cauliflower (for mash)

Ratio: 1:1 by weight

Very low carb alternative - steam and blend smooth with vegan butter. Different texture but good flavour.

4. Parsnip

Ratio: 1:1

Sweeter and more fibrous - lovely roasted or in stews but mash is sweeter and less neutral.
