3 Substitutes for Ground Turmeric in Red Lentil and Coconut Soup

1. Saffron (dissolved in warm water)

Ratio: Large pinch saffron per 1/4 tsp turmeric

Expensive but provides golden colour - completely different flavour, much more floral.

2. Mild curry powder

Ratio: 1:1

Contains turmeric - adds additional spice complexity but provides the colour and some of the flavour.

3. Annatto powder (achiote)

Ratio: 1:1

Provides identical golden-orange colour with a mildly earthy, slightly sweet flavour. Popular in Latin American cooking.
