| 3 | star anise |
| 1 stick | cinnamon |
| 4 cloves | whole cloves |
| 30 g | fresh ginger, charred directly over gas flame |
| 3 tbsp | tamari |
| 200 g | rice noodles, cooked per packet |
| 200 g | firm tofu, thinly sliced |
| 1 handful each | bean sprouts, fresh basil, mint, sliced chilli |
