| 4 | kaffir lime leaves, torn |
| 30 g | galangal or ginger, sliced |
| 2 | red chillies, sliced |
| 300 g | oyster or shiitake mushrooms |
| 3 tbsp | tamari |
| 3 tbsp | lime juice |
| 1 handful | fresh coriander |
