4 Substitutes for Cashews in Vegan Caesar Dressing

1. Sunflower seeds (soaked)

Ratio: 1:1 by weight

Soak for 4 hours, drain and blend. Slightly more bitter - add extra lemon juice. Completely nut-free.

2. White beans (cannellini)

Ratio: Equal weight (drained)

Completely neutral flavour, very smooth when blended. Best when you need neutral creaminess.

3. Macadamia nuts

Ratio: 1:1

Even richer and creamier than cashews - the most luxurious dairy-free cream. More expensive.

4. Silken tofu

Ratio: Equal volume

Smooth when blended but slightly beany - combine with extra lemon juice and nutritional yeast to counteract.
