5 Substitutes for Plain Flour in Fudgy Vegan Brownies

1. Gluten-free plain flour blend

Ratio: 1:1

Most GF blends now perform close to plain flour in sauces and cakes - use a quality brand with xanthan gum.

2. Rice flour

Ratio: 1:1 for thickening

Creates a beautiful, clear, glossy sauce - slightly different texture in baking. Naturally gluten-free.

3. Oat flour (blitzed oats)

Ratio: 1:1

More nutritious and slightly denser - works well in pancakes, cookies and muffins. Not suitable for pastry.

4. Spelt flour

Ratio: 1:1

Lower in gluten, nuttier flavour - not coeliac-safe but better tolerated by many. Great in flatbreads and pasta.

5. Chickpea flour (gram flour)

Ratio: 1:1 for thickening and coating

Nutty, high-protein alternative - excellent for pancakes, fritters and batters. Noticeable flavour.
